Easy Sweet Potato Brownies

These Easy Sweet Potato Brownies are tender, sweet, and incredibly simple to prepare! Just one bowl and a handful of ingredients are all you need to create warm, gooey brownies. I promise your friends and family won't guess that sweet potato is the key ingredient in these brownies!

Brownies are one of the best desserts out there! But, have you had sweet potato as the base for a brownie? If not, I highly recommend trying it and I bet your friends and family will never even know sweet potato is in these delicious brownies. After I made these brownies, it was so hard to not eat all of it soon after it came out of the oven. But, waiting until after dinner to really go all out on these brownies was worth the wait. My Easy Sweet Potato Brownies are great for a crowd!
Easy Sweet Potato Brownies
Yields: 12 slices
Pre-heat oven: 350 degree F
Pre-time: 5 minutes
Bake-time: 35 minutes
Total-time: 40 minutes
Equipment: 8x12 baking dish, 2 large bowls, can opener, whisk, spatula, parchment paper, measuring spoons, measuring cups, cooling rack.
Ingredients
15 oz can organic sweet potato puree
1 tbsp olive oil
1/2 cup almond butter or peanut butter
3 tbsp real maple syrup
1 tsp pure vanilla extract
3/4 cup unsweetened cocoa powder
1/2 tsp salt
1/2 coconut sugar
1/4 cup all-purpose flour, or Gluten Free baking flour
3/4 cup chocolate chips
3/4 walnuts or pecans (optional)
Directions
Pre-heat the oven 350 degrees F.
Lightly spray non-stick oil in the baking dish, then add parchment paper over the dish. Spray more non-stick over the parchment and use a paper towel to help evenly coat. Set it aside.
In a large bowl, add the almond butter and maple syrup. Place in the microwave for about 30 seconds. *This helps softened the almond butter so it blends with the rest of the ingredients. Take the bowl out of the microwave and whisk the almond butter and maple syrup together.
Next, add in the oil, sweet potato puree, coconut sugar and vanilla. Whisk all the ingredients together and set the bowl aside.
In another large bowl, blend together the cocoa powder, flour, salt, baking powder, chocolate chips and walnuts.
Carefully pour the dry ingredients into the wet ingredients. Use a spatula to blend all of the ingredients together, but try to not over mix.
Then, pour the batter into the prepared baking dish. Smooth and level the batter using the spatula.
Bake for about 35 minutes, or until a tooth pick comes out clean.
Let the brownies cool for about 1 hour before cutting. This gives it time to firm up. Extremely hard to do, but it's worth it.
To jazz up the brownies, cut a slice and add it to a pretty dish. Top it off with ice cream, chocolate syrup and caramel sauce. Enjoy!
