Tomato Onion Tart with Goat Cheese

My Tomato Onion Tart with Goat Cheese is a savory tart that is bursting with flavor. We used our garden grown tomato's, onions, peppers and herbs and local Goat Cheese. So good!

Towards the end of summer our tomato's are growing like crazy, as well as our onions, herbs and banana peppers. I remembered Gesine Bullock-Prado had done a summer tart recently using similar ingredients and thought I would take a crack at it, so I did and it was so easy! This recipe is made to impress and be either an appetizer or a meal. You can include other veggies like zucchini or thinly sliced potatoes.


Tomato Onion Tart with Goat Cheese


Yields: 1 tart

Pre-heat oven: 400 degree F

Prep-time: 10 minutes

Pre-bake (tart): 25 minutes

Bake-time: 45-50 minutes

Total-time: ~80 minutes





Ingredients

  • 1 roll store bought pie crust, room temperature

  • 3 large heirloom tomato's, 1/4" slices

  • 1 medium yellow or red onion, sliced

  • 1 or 2 banana pepper, or a bell pepper, diced

  • 1/4-1/3 cup goat cheese

  • 2 tsp Italian herbs, or your favorite combination

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper


Directions

  1. Pre-heat the oven to 400 degrees F.

  2. Lightly grease a circular, rectangle or square tart pan, and set it off to the side.

  3. Blind Baking: Roll out your pie crust and place it carefully in the pan. Cover the crust with parchment paper or foil. Fill it completely with pie weights, dried beans, or rice. Bake for approximately 15 minutes, or until the crust's edges begin to brown. Remove the pan from the oven and let it cool for a few minutes. Then, gently lift out the parchment with the weights. Discard the parchment once it has cooled, and you can save the weights for future use.

  4. Then, lower the oven temperature to 375 degrees F. Use a fork to prick holes across the bottom of the pie crust to let steam escape. Bake for an additional 10 minutes. Afterward, let the pie cool for approximately 20-30 minutes.

  5. While the crust is cooling, start prepping your vegetables.

  6. Layering your tart: Begin with the tomatoes, arranging them in a circular, vertical, or horizontal pattern. Next, layer the onions in a similar style as the tomatoes. Scatter the diced peppers over the tomatoes and onions, followed by the seasonings and herbs. Finally, place sizable chunks of goat cheese and sprinkle them over the entire tart.

  7. Bake at 375 degrees F for about 45-50 minutes, or until the crust and the veggies are a gorgeous golden color. The smell is amazing!

  8. Allow the tart to cool for about 10 minutes, then enjoy!
