Tomato Onion Tart with Goat Cheese

My Tomato Onion Tart with Goat Cheese is a savory tart that is bursting with flavor. We used our garden grown tomato's, onions, peppers and herbs and local Goat Cheese. So good!

Towards the end of summer our tomato's are growing like crazy, as well as our onions, herbs and banana peppers. I remembered Gesine Bullock-Prado had done a summer tart recently using similar ingredients and thought I would take a crack at it, so I did and it was so easy! This recipe is made to impress and be either an appetizer or a meal. You can include other veggies like zucchini or thinly sliced potatoes.
Tomato Onion Tart with Goat Cheese
Yields: 1 tart
Pre-heat oven: 325 degree F
Pre-heat oven: 425 degree F
Prep-time: 10 minutes
Pre-bake (tart): 25 minutes
Bake-time: 50 minutes
Total-time: ~80 minutes
Ingredients
1 roll store bought pie crust, room temperature
3 large heirloom tomato's, 1/4" slices
1 medium yellow or red onion, sliced
1 or 2 banana pepper, or a bell pepper, diced
1/4-1/3 cup goat cheese
2 tsp Italian herbs, or your favorite combination
1/2 tsp salt
1/2 tsp ground black pepper
Directions
Pre-heat the oven to 325 degrees F.
Lightly grease a circular, rectangle or square tart pan, and set it off to the side.
Blind Baking: Unroll your pie crust and gently fit it in the pan. Line the pie crust with parchment paper or foil. Fill with either pie weights, dried beans or rice. Fill it to the top and bake for about 15 minutes, or until the edges of the crust are starting to brown. Then, remove it from the oven and carefully lift the parchment with the weights out of the pie. Discard the parchment (once cooled) and you can reuse the weights for another time.
Next, prick holes all around the bottom with a fork. Bake for another 10 minutes. Then, allow the pie to cool for about 15 minutes.
While the crust is cooling, start prepping your vegetables.
Layering your tart: Start with the tomato's, this can be in a circular, vertical or a horizontal layout. Then, add the onions, similar design to the tomato's. Sprinkle the diced peppers over the tomato and onions, then add the seasonings and herbs. Lastly, add decent size chunks of the goat cheese and sprinkle it over everything.
Bake for about 50 minutes, or until the crust and the veggies are a gorgeous golden color. The smell is amazing!
Allow the tart to cool for about 10 minutes, then enjoy!
