Chocolate Nut Clusters

One of my favorite go to candy's to make are my Chocolate Nut Clusters. I absolutely LOVE the crunchiness of the nuts melted in the rich & smooth chocolate. It's the easiest and perfect little dessert.

I started making these several years ago when I was having massive chocolate cravings, but was also craving nuts too. I realized I could just blend the ingredients and take care of both cravings. Now, it's one of my favorite goodies to make. I do want to note that I use 65% chocolate, as milk chocolate is a bit too creamy for me, but you can certainly use milk chocolate if you like.

Chocolate Nut Clusters
Yields: ~30 clusters
Prep-time: 5 minutes
Cook-time: 10-15 minutes
Freeze-time: 3 hours or overnight
Ingredients
370 grams or 1 1/2 cups of 65% chocolate
1 tbsp coconut oil
1 tsp pure vanilla extract
1 1/2 cups mix nuts, chopped (I used almonds, pistachios, pecans, and walnuts)


Directions
Line two baking sheet pans with parchment paper or baking mat, set aside.
Pre-heat a medium pot on medium heat. Add all of the ingredients to the heated pot and stir.
Let the chocolate sit in the pot for a few minutes to heat up and melt a bit more before stirring again, about 3-5 minutes.
Begin stirring as the chocolate starts to really melt and begin blending the ingredients. You will want to stir frequently, to avoid burning the chocolate.
Once the chocolate and the ingredients have fully blended and there are no signs of chocolate lumps, use a tablespoon to scoop out the chocolate cluster and carefully pour onto the prepared baking sheet pan. It will spread a bit and you will get a bit messy as you will need to use your finger to help assist the chocolate to get off the tablespoon. Leave about 1/2 inch between each cluster.
Repeat this process until the chocolate mixture is all done. Then, place the sheet pans on a flat surface in your freezer. Freeze for at least 3 hours or overnight.
STORAGE: After the chocolate clusters have set, you can take them off the parchment and place each of them in a freezer bag. They will keep for 1-2 months. Enjoy!
Note: We did not temper the chocolate, so it will melt quickly. Eat them soon after you take them out of the freezer.
