My Strawberry Apple Crisp is great for all occasions. It's quick, easy and healthy enough to be a delicious summer breakfast, snack, or even as a dessert with some vanilla bean ice cream or whip cream. This is 100% Gluten Free, Dairy Free and is low sugar.

I love a good crisp, but sometimes I want one that is not heavy on my stomach. My Vegan Strawberry Apple Crisp oat crumble is very low in sugar, Gluten Free and I swapped out butter for coconut oil, though, you can use vegan butter, or dairy free butter instead. I replaced all-purpose flour for almond flour, making this crumble more of a crumbly texture. I love how the fruit absorbs the topping, and when you add some whip cream or ice cream, it brings the dish together.
Vegan Strawberry Apple Crisp

Pre-heat oven: 375 Degree F
Prep-time: 10 minutes
Bake-time: 45-50 minutes
Total-time: 60 minutes
Equipment: 1 pie dish, two medium size bowls, liquid measuring cup, measuring spoons, spatula, cutting board, paring knife, cooling rack.
Ingredients
Crumble Topping
1 cup Gluten Free Old Fashion Oats, or regular old fashion oats
1/2 cup almond flour, or all-purpose flour, or Gluten free baking flour
1/2 tsp salt
3 tbsp coconut sugar, or brown sugar
1 tbsp monk fruit sweetener, or cane sugar
1/2 coconut oil, mostly melted
Fruit Filling
1 apple, chopped
1 small carton of strawberries, diced (with stems removed)
2 tsp lemon juice
2 tsp coconut sugar
Directions
Lightly grease your pie dish with some coconut oil, and set it aside.
To a medium baking bowl, add your chopped apples, diced strawberries, lemon juice and coconut sugar. Use a spatula to stir the ingredients together.
In another medium baking bowl, stir together the oats, almond flour, salt, coconut sugar, & monk fruit sweetener.
Heat the coconut oil in a liquid measuring cup in the microwave for about 30 seconds, or until mostly melted. Add to your oat mixture and stir until the oat mixture is completely coated with the coconut oil.
Add the strawberries and apples to your pie dish and spread out evenly. Next, carefully pour your oat mixture over the strawberries and apples. Use the spatula, or clean hands, to gently pat the oat mixture down.
Bake for about 45-60 minutes, this depends on your oven. But, you are looking to get a rich golden color on your topping.
Allow to cool for about 10 minutes before serving.
Store in the fridge for 3 days. Enjoy!
