Peach Donuts

Tender Peach Donuts with real peaches inside and out!

Great for breakfast or as a mid day snack.

Peaches are the best in the summer time; their so juicy, and chefs and bakers adore using them in so many dishes. I wanted to try something a bit different than what was out there, so I came up with this recipe to somewhat mimic the traditional upside down pineapple cake, but in a donut version. To my surprise, my Peach Donuts came out so tender, and somewhat refreshing with fresh peaches baked on the inside and on the outside. Hardly need for additional sweetness, since the peaches are at its prime right now. I added hemp seeds, chia seeds, oats and cinnamon to help provide additional nutrients. These were a huge hit with my family, and I hope they will be a huge hit with yours!


Peach Donuts


Yields: 12

Pre-heat oven: 375 degree F

Prep-time: 10 minutes

Bake-time: ~20 minutes

Total-time: 30 minutes


Equipment: Food processor, donut mold, 1 large bowl, 1 small bowl, measuring spoons, measuring cup, whisk, spatula, cooling rack.




Ingredients

  • 5 large ripe peaches, peeled (reserve 2 peaches)

  • 2 tbsp unsweetened applesauce

  • 3 tbsp monkfruit sweetener

  • 1 tsp pure vanilla extract

  • 1 eggs

  • 2 3/4 cups all-purpose flour or GF baking flour

  • 1 tbsp Ceylon cinnamon, ground

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 tbsp chia seeds

  • 1 tbsp hemp seeds

  • 3/4 cups quick oats


Directions

  1. Pre-heat the oven to 375 degree F.

  2. Lightly grease a donut mold with non-stick spray, or butter. Set aside.

  3. Peel the skin off the peaches and place three out of the five in a food processor. Dice the fourth and fifth peaches and place it in a small bowl and set it aside.

  4. Add the apple sauce, vanilla extract, monk fruit sweetener and egg to the food processor. Blitz for about 30 seconds. Make sure to scrap down the sides as you go. The consistency should be somewhat foamy looking and creamy.

  5. In a large bowl, whisk together the flour, cinnamon, salt, baking powder, chia seeds, hemp seeds and oats. Make a well in the center.

  6. Carefully pour the wet mixture to the dry mixtures. Use a spatula to blend the ingredients together, but try to not over mix. Overmixing will create tough donuts.

  7. To your prepared donut mold, add the diced peaches to the bottom of each mold.

  8. Next, use a spoon to add the batter to each mold, covering the diced peaches. Fill about 3/4 of the way full. Tap the donut mold to release any air bubbles.

  9. Bake for about 20 minutes, or until lightly golden and a toothpick comes out clean.

  10. Allow the baked donuts to cool in the mold for about 2-3 minutes. Then, carefully tip the donut mold over the cooling rack; the donuts should fall right out. If they don't, use a butter knife to help remove each donut and transfer to the cooling rack.

  11. Once all the donuts are baked, and cooled, dust them with some powder sugar and enjoy!
