Breakfast Apple Cider Donuts (Regular or GF)

These Breakfast Apple Cider Donuts are packed with apple spice flavors and are

perfect for breakfast or any time of the day. After making these donuts for several years, my family and I agree that they taste best without a sugar coating. Adding a sugar and cinnamon coat or drizzling a glaze is optional, but they have enough sweetness inside to satisfy any sugar cravings.

Breakfast Apple Cider Donuts

Pre-heat: 350 degrees F

Yields: ~12 donuts

Prep-time: 5 minutes

Bake-time: ~15 minutes

Ingredients

  • 2 cups all-purpose flour (120 grams) or GF 1 to 1 Baking Flour

  • 1 tsp salt

  • 1/2 tsp ground ginger

  • 1 1/2 tsp ground cinnamon ( I use Ceylon cinnamon)

  • 1/2 tsp ground nutmeg

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/3 cup quick oats (or regular oats) optional

  • 1/3 cup sugar (67 grams)

  • 1/2 cup boiled cider (I use King Arthur brand)

  • 1 cup unsweetened applesauce

  • 1/2 cup apple cider juice

  • 2 tsp pure vanilla extract

Direction

  1. Pre-heat the oven to 350 degree F.

  2. Lightly grease a donut mold, then set aside.

  3. In a medium bowl, whisk together applesauce and sugar until creamy. Then, add in the boiled cider, apple cider juice, and vanilla. Whisk again until well blended.

  4. In a large bowl, add in the dry ingredients. Stir to blend.

  5. Make a well in the center of the flour mixture, then slowly add the wet ingredients, stirring as you go.

  6. Use a spatula to bring all of the ingredients together, but don't over stir because you want to maintain the air bubbles you've created. Over stirring can lead to dense or dry donuts.

  7. Using either a spoon or a piping bag (filled with the batter), add the batter to the donut mold, filling it up about 3/4 of the way.

  8. Bake for about 15 minutes, or until a toothpick comes out clean. Allow the donuts to cool in the pan for 5 minutes before taking them out of the mold and onto a cooling rack.

  9. If you plan on freezing them, let the donuts cool 100% before placing them in the freezer.
