Top your yogurt with my Easy Baked Apricots, then drizzle the remaining maple syrup and apricot juices over either dairy-free plain yogurt (such as Forager Cashew Yogurt) or regular vanilla bean yogurt (like Siggis). Add your choice of chopped nuts, seeds, granola, touch of cinnamon and some berries. This combination will keep you satisfied while offering excellent health benefits.


Easy Baked Apricots


Pre-heat oven: 350 degrees F

Prep-time: 5 minutes

Bake-time: 15-20 minutes

Broil-time: ~10 minutes

Total-time: ~35 minutes


Equipment: 8x8" baking dish pan, chopping board, paring knife, large spoon, measuring spoons




Ingredients

  • 7-8 fresh apricots, halved and pitted

  • 3-4 tbsp real maple syrup

  • 1 tbsp coconut sugar or date sugar

  • sprinkle of ground cinnamon (I use Ceylon cinnamon)

  • 1 1/2 cups Plain or Vanilla Bean Yogurt, DF or Regular (I like Forager Cashew Yogurt or Siggis)

  • 2-3 tbsp finely chopped pistachios, or any nuts you like

  • 1 tbsp hemp seeds

  • warm maple syrup and apricot juice from baking dish



Directions

  1. Pre-heat the oven 350 degrees F.

  2. On a clean cutting board, cut the apricots in half and remove the pits. Then, place the apricots in a baking dish.

  3. Drizzle some maple syrup over the apricots, then sprinkle some coconut sugar and cinnamon, just enough to add another element of flavor.

  4. Bake for approximately 15-20 minutes, or until tender. Next, change the oven to the broil setting and cook the apricots for another 10 minutes, or until they begin to slightly brown and crisp around the edges. (*Monitor your apricots closely, as each oven heats differently).

  5. Next, remove the apricots from the oven and turn the oven off.

  6. Place your preferred yogurt in a plate or bowl. Next, add 3-4 baked apricots on top of the yogurt. Sprinkle with finely chopped nuts, seeds, granola, and berries. Finally, drizzle a blend of warm maple syrup and apricot juice over the dish.

  7. Enjoy for breakfast, lunch or even as a dessert!
