Peach Mango Pudding

My Peach Mango Pudding is a delicate, dairy free dessert that takes less than

Who doesn't love a dessert that takes less than 10 minutes to make? Silken tofu is the key ingredient to make this pudding soft and delicate. My simple Peach Mango Pudding is a great dessert to share among family or friends and needs only 6 ingredients to make.


Peach Mango Pudding


Yields: 6 servings

Prep-time: 5 minutes

Total-time: ~8 minutes

Chill-time: 1-2 hours (optional)


Equipment: Food processor, measuring spoons, medium glass container with lid





Ingredients

  • 1 medium ripe peach, peeled, chopped

  • 1 medium ripe mango, peeled, chopped

  • 1 16 oz silken tofu, chopped

  • 2 tbsp pure maple syrup

  • 1/4 tsp salt

  • 1/4 tsp almond extract or vanilla extract


Directions

  1. Peel and chop the mango and peach and place it in the food processor, or blender. Blitz for about 10 seconds.

  2. Next, add in the tofu, maple syrup, salt and almond extract. Blitz for about 20-30 seconds, or until the consistency is creamy and all ingredients are fully incorporated.

  3. Poor the pudding into a dish. You can eat right away, or let it firm up in the fridge for at least 1-2 hours.

  4. Top with more peaches and some whip cream and enjoy!
