First, what is Aquafaba? If you've ever opened a can of chickpeas or garbanzo beans, aquafaba is the liquid inside the can. Remarkably, this liquid has properties almost identical to egg whites and can replicate the same texture in dishes like mousse, angel food cake, and macarons. My Aquafaba Chocolate Peppermint Mousse will have your guests convinced that you spent hours creating this impressive dessert, but it actually takes less than 20 minutes to prepare! Happy Holidays!


Aquafaba Peppermint Mousse


yields: 6 servings

Prep-time: 10 minutes

Chill-time: 4-6 hours


Equipment: Stand or Electric mixer, large bowl, spatula, measuring up, measuring spoons, liquid measuring cup, medium bowl microwave safe, knife, cutting board, can opener, 6 bowls, or 1 large bowl with lid.





Ingredients

  • 3/4 cup to 1 cup Aquafaba (Chickpea water from 14 oz can)

  • 1 1/2 tsp lemon juice

  • 1/4 tsp pure peppermint extract

  • 1 1/2 tbsp real maple syrup

  • 1/2 tsp pure vanilla extract

  • pinch of salt

  • 1 cup dairy free or regular chocolate chips or chocolate bar (semi-sweet or 65%)

Toppings

  • Peppermint candy bits

  • Milk chocolate shavings (dairy free or regular)


Directions

  1. In a large bowl, using a stand mixer or a hand electric mixer with the whisk attachment, place the Aquafaba, lemon juice, maple syrup, salt, peppermint extract, and vanilla extract. Use a spatula to mix them together.

  2. Next, start whipping the ingredients on a medium to high speed for approximately 10 minutes, until you achieve a lovely stiff peak. Be careful not to overwhip!

  3. Once you have reached the stiff peak, set the bowl aside.

  4. Place the chocolates in a medium bowl. Heat them in the microwave for 20-30 seconds at a time, stirring after each interval, until fully melted.

  5. Carefully incorporate the slightly cooled melted chocolate into the Aquafaba mixture with a spatula. Transfer the mousse into 6 dessert bowls or a large bowl with a lid.

  6. Let the mousse sit in the fridge for about 4-6 hours, or until settled.

  7. Top with crush peppermint candy and chocolate shavings and enjoy!
