Popovers are similar to a light roll made from an egg batter similar to that of Yorkshire pudding. You can bake them in muffin tins or traditional popover pans, which have straight-walled sides rather than angled. They are best as a breakfast side or as an afternoon snack. My Cheddar, Chives Popovers are ideal for those who love a savory breakfast.

Yields: 9 popovers

Pre-heat oven: 425 degree F

Prep-time: 5 minutes

Rest-time: 10 minutes

Bake-time: 30 minutes

Total-time: 45 minutes


Cheddar, Chives Popovers

Ingredients

  • 1 cup all-purpose flour, or GF flour (1 for 1 ratio)

  • 1 tsp salt

  • 2 eggs, room temperature

  • 1/2 cup shredded cheddar cheese, or nondairy cheese

  • 3 tbsp unsalted butter, melted, or dairy free butter

  • 1/3 cup diced chives

  • 1 cup whole milk, or any non-dairy milk


Directions

  1. Pre-heat the oven to 425 degree F.

  2. Lightly grease the popover tin, or muffin tin, with non-stick spray, then set aside.

  3. In a medium bowl, whisk together flour, and salt. Set aside.

  4. In a large bowl, add the milk, eggs, and 1 tbsp melted butter. Whisk for about 20 seconds, then use a spatula and stir in the shredded cheese and chives. Next, add in the flour mixture. Use the spatula to blend all the ingredients until they are fully incorporated.

  5. Let the batter rest for about 10 minutes.

  6. 5 minutes before the timer is done, brush the rest of the melted butter in the popover tin. Make sure to brush the bottom and sides really well.

  7. Place the pan on the bottom rack of the heated oven and let it heat up for 5 minutes.

  8. Pull the heated tin out of the oven and use a ladle to scoop the batter. You need to only fill each tin half way full, this will leave plenty of space for the popovers to rise.

  9. Bake for 20 minutes. Then, lower the temperature to 350 degree F. and continue to bake for another 10 minutes.

  10. They should be a light golden color, popping out of the tin and somewhat firm. You can pull them out right away and serve them with some eggs and bacon.
