Ingredients
14 Medjool dates, pitted and cut in halves
1 cup unsalted peanuts or cashews
2/3 cup unsalted pistachios
1/2 unsalted almonds
1/4 cup unsalted sunflower seeds
1 tbsp chia seeds
2 tbsp flaxseed meal
2 tbsp hemp seeds
5-6 tbsp creamy peanut butter or any nut butter
1 1/4 cup chocolate chips, regular or vegan or sugar free
1-2 tbsp peanut butter
almond slivers (optional)
Directions
Line your baking dish with parchment paper, then set it aside.
Get your dates ready, then use a food processor to blend the dates, nuts, and seeds until the mixture looks similar to wet sand.
Next, incorporate the nut butter and blend once more until everything is thoroughly mixed. You may need to scrape the sides with a spatula to ensure the nut butter is completely blended in.
Spoon the mixture into your prepared baking dish. Use clean and damp hands to mold the mixture into your dish, making sure it's in an even layer.
Place the chocolate and the final one to two tablespoons of nut butter in a microwave-safe mixing bowl. Microwave the mixture in 20-second intervals, stirring after each interval.
Pour the melted chocolate over the seed mixture and smooth out in an even layer.
Sprinkle almond slivers or sea salt flakes.
Place in the fridge for about 1-2 hours, or until the bars are completely firm.
Slice into bars and enjoy!
Store in the fridge for about 4-5 days.
