Basic Waffles (Regular or GF/DF)

My waffle recipe is fail proof and can be made ahead of time and kept in the fridge for up to 3 days. These make a perfect waffle that is soft on the inside and crispy on the outside. Top with your favorite maple syrup and enjoy!

I make waffles just about every weekend. I used to buy the waffle fix rom the grocery store, until I realized how easy they are to make. My recipe can be made Gluten and Dairy Free, and a few days ahead. Try zesting orang or lemon zest to the batter to add a fresh twist.
Basic Waffles
Yields: 8 waffles
Ingredients
2 1/2 cups + 2 tbsp all-purpose flour, or gluten free flour
1/2 tsp salt
1 tbsp baking powder
2 eggs, room temperature
1 tsp corn starch
1/4 cup coconut sugar, or brown sugar
1/4 cup quick oats (optional)
1 tbsp chia seeds (optional)
1 tsp pure vanilla extract
1/4 tsp pure almond extract
1 1/4 cup oat milk, or whole milk
1/3 cup canola oil
Directions
In a large bowl, whisk together flour, salt, baking powder, and corn starch. Add in the eggs and whisk into the flour mixture as much as you can. Next, stir in the coconut sugar, and oats.
Then, add in the oat milk, extracts, chia seeds, and canola oil. Whisk until the batter is creamy and somewhat thick. If it's too thick, add a bit more liquid to the batter to thin it out.
Pre-heat your waffle iron. You might need to lightly spray non-stick oil to your iron before adding the batter each time.
When it's ready, add about 1/2 cup of batter to waffle iron. Cook the waffle according to your waffle iron brand.
Add your favorite maple syrup, or jam and top with a dollop of whip cream! bon appétit!
