Simple Greek Salad

My Simple Greek Salad is so quick to make and tastes amazing as is, or added to Gyros or as a topping for pita chips or on top of other salads. I make this salad a lot, especially during the summer when we are growing more than half of the ingredients, and it's soooo healthy!

Now, I can honestly say I absolutely LOVE making this salad, especially during the summer months. But, what I love most about this salad is that it can be used not only as a salad, but as a filling for Gyros (which is what we do), as a dip for crackers, or as another topping for lettuce salads. Needless to say, it's ideal for parties, and small get togethers.


Simple Greek Salad


Yields: 1 large bowl

Prep-time: 5 minutes

Total-time: 1 hour (including marinating time)







Ingredients

  • 1 cup Kalamata olives, pitted

  • 1 whole cucumber, diced

  • 1/3 cup red onion, diced

  • 2 medium tomatoes, diced

  • 1 tsp salt (or more)

  • 1/2 tsp ground black pepper

  • 1/4 tsp ground garlic powder

  • 1/2 container Traditional crumble Feta

  • 2-3 tbsp good pure olive oil 2-3 tsp good pure balsamic vinegar


Directions

  1. Using a sharp knife, dice up olives, cucumbers, red onion, and tomatoes and place them in a large bowl.

  2. Add salt, pepper, garlic powder, olive oil, balsamic vinegar and feta crumbles. Use a wooden spoon to stir all the ingredients together until well combined. You can add more seasonings and feta, it all depends on your taste buds.

  3. Cover the bowl and place it in the fridge for at least 45 minutes to allow all the flavors to absorb.

  4. Add to your Gyros, or as a dip for crackers or as a topping for a lettuce salad with a dollop of Tzatziki sauce and lemon chicken, drizzled with a bit more olive oil and balsamic vinegar. Enjoy!
