Tahini Peanut Butter Cookies

These Tahini Peanut Butter Cookies draw inspiration from Deliciously Ella's Tahini Cookies. In my rendition, I've included peanut butter, vanilla extract, and a chocolate layer to enhance the cookies with an additional dimension. They feature a crispy exterior and a soft center.

Tahini preserves many of the nutritional benefits of sesame seeds. Since it comes from a seed high in oil content, it offers essential fatty acids and is rich in calcium, making it a great choice for those who avoid dairy products. Although tahini provides a good amount of protein and minerals and is high in unsaturated fats, it is also calorie-rich, so it should be eaten in moderation. In baking, tahini contributes a rich, nutty flavor and moisture to recipes, making it an excellent substitute for traditional nut butters, while also blending well with them and complementing chocolate beautifully. This is why my Tahini Peanut Butter Cookies make a fantastic snack or dessert option.
Tahini Peanut Butter Cookies
Yields: 12 cookies
pre-heat oven: 375 degrees F
Prep-time: 5 minutes
Chill-time: ~10-20 minutes
Bake-time: 12-15 minutes
Total-time: ~40 minutes
Equipment: 1 large mixing bowl, baking sheet pan, parchment paper, whisk, spatula, liquid measuring cup, measuring cup, measuring spoons, cooling rack.
Ingredients
1 cup spelt flour or oat flour
1 1/4 tsp baking powder
1/2 tsp salt
1/3 cup tahini, creamy
2 tbsp peanut butter, creamy
1 tsp pure vanilla extract
3/4 real maple syrup
chocolate chips (topping)
Directions
Pre-heat the oven to 375 degrees F.
Line a baking sheet pan with parchment paper, and set it aside.
In a large mixing bowl, whisk together flour, salt, and baking powder. Make a well in the center.
Next, add in the tahini, peanut butter, vanilla and maple syrup. Use a spatula to bring the ingredients together until well combined.
Place in the fridge for about 10-20 minutes to firm the batter.
Scoop the batter with a tablespoon and form it into a ball. Set it on the prepared baking sheet, then gently press it down to slightly flatten the cookie dough. Repeat this process.
Bake for about 12-15 minutes, depending on your oven. Your cookies should have a light golden brown edge when they are done baking.
Move to a cooling rack. Instantly sprinkle chocolate chips on each cookie. Let the chocolate melt, then spread it over each cookie using the back of a spoon.
Enjoy right away or allow to cool and keep in an airtight container for about 4 days. Or, keep in a freezer bag for up to 1 month.
