Chocolate Covered Dried Apricots

They are lightly coated in either dairy-free or regular semi-sweet chocolate and topped with chopped pistachios and shredded coconut (or any topping you prefer). These treats are perfect for a delicious snack or when you want a sweet indulgence.

My Chocolate Covered Dried Apricots are an excellent snack because dried apricots are packed with nutrients. Rich in fiber, antioxidants, and essential vitamins, they're more than just a chewy treat—they're a smart addition to your daily routine. These golden fruits are high in iron, a mineral that helps transport oxygen throughout your body.

Chocolate Covered Dried Apricots
Yields: (1) 16 oz bag of apricots
Prep-time: 5 minutes
Chill-time: 2 hours
Total-time: ~2 hours
Equipment: 1 serving dish, 1 small bowl, chopping board, chopping knife, fork, parchment paper
Ingredients
16 ounce bag of dried apricots
1/4 cup dairy free or regular semi-sweet chocolate chips
1/4-1/2 tbsp coconut oil
1/4 cup crushed nuts, seeds and/or shredded coconut
Directions
Place parchment paper on your serving dish, or plate and set it aside.
Finely chop up your nuts of choice. Or, if you have bought pre-chopped nuts, then skip this step.
Place your chocolate chips and coconut oil in a bowl suitable for microwaving. Heat in the microwave for approximately 20 seconds, then stir. Microwave again for an additional 15-20 seconds. Stir until the chocolate and coconut oil are completely melted and combined. If the chocolate hasn't fully melted, place back in the microwave for another 15 seconds.
With a fork, dip the apricots into the melted chocolate, ensuring each side is coated. Then, promptly place the chocolate-covered apricot onto your prepared serving dish.
Repeat this process until all apricots have been fully coated.
Sprinkle your finely chopped nuts and shredded coconut all over the chocolate covered apricots.
Place in the fridge for at least 2 hours, or until completely set.

Storage: Keep chocolate-covered apricots in the fridge. If you won't be serving them the same day, store the apricots in a lidded container for about 4 days.
