Healthy Berry Crumble Bars

My Healthy Berry Bars use cashew butter instead of traditional butter, making them an excellent option for individuals with dairy sensitivities or allergies. Packed with delicious benefits, these bars are low in sugar, gluten-free, and made with just a few ingredients. I highly recommend trying these delightful treats!

I aimed to create a berry crumble bar recipe without using any butter. In the past, I've substituted nut butters for butter, but I doubted they would achieve the same crumbly texture. I also wanted to avoid a nut butter that would overpower the berries, preferring something more subtle. Cashew butter was my choice because it offers a mild background flavor in the nut butter category. It's rich without being overly nutty. It turned out to be an excellent butter substitute for my Healthy Berry Crumble Bars. Feel free to use any berries for your filling and adjust the thickness to your liking. In this particular recipe, I had used leftover cranberry sauce from Christmas and it worked out beautifully.
Healthy Berry Crumble Bars
Pre-heat oven: 350 degrees F
Prep-time: 5-10 minutes
Bake-time: 20-25 minutes (first time)
Bake-time: 20-25 minutes (second time)
Cooling-time: ~10-15 minutes
Total-time: ~75 minutes
Equipment: 9x13 baking dish, food processor, 1 large mixing bowl, 1 medium mixing bowl, liquid measuring cup, measuring spoons, measuring cups, spatula, whisk, cooling rack.
Crust Ingredients
1/2 cup almond flour
1 1/2 cup gluten free baking flour or all-purpose flour
1/4 tsp salt
3 tbsp honey
1 cup cashew butter, room temperature
Filling Ingredients
1 1/2 cup fresh or frozen berries, rinsed
1/2 cup honey or real maple syrup
2 tbsp gluten free baking flour or all-purpose flour
1/2 tsp salt
1/2 tsp pure vanilla extract
1 tbsp chia seeds (optional)
Crumble Topping
3/4 cup gluten free oats or regular oats
3/4 cup gluten free baking flour or all-purpose flour
2-3 tbsp almond flour
1/3 cup honey
1/2 cup cashew butter-cold
Directions
Pre-heat the oven to 350 degrees F.
Lightly grease your baking dish, line with parchment paper, then set it aside.
Divide your cashew butter into two separate cups: one for room temperature and one for refrigeration.
In a food processor, blend all the crust ingredients until they achieve a paste-like texture.
Pour the crust mixture into your prepared baking dish and bake for approximately 20-25 minutes, or until the crust turns a light golden brown. Let it cool slightly.
Then, in a medium mixing bowl, mix all the filling ingredients together and stir until they are thoroughly combined. Pour the mixture over your crust.
Next, in a different mixing bowl, mix all the ingredients for the crumble topping. Use a spatula to blend them until they achieve a crumble-like consistency. Evenly spread the crumble topping over the filling.
Bake for about 20-25 minutes, or until your topping is a nice golden brown and a bit crispy.
Allow the bars to cool in the dish, this allows time for the bars to firm.
After approximately 10-15 minutes, lift the bar out of the dish using the sides of the parchment paper and place it on the cooling rack. Let it cool a little longer, then cut it into slices, arrange them on a plate, and add whipped cream or ice cream on top. Enjoy!
