Holiday Orange Cinnamon Popovers

The holiday season is rich with oranges, spices, and tasty foods, inspiring me to mix two of my favorite flavors, oranges and cinnamon, into one of my cherished breakfast treats, Popovers. My Holiday Orange Cinnamon Popovers are packed with these festive flavors, making them ideal for breakfast or a mid-afternoon snack.

A few years ago, my mother-in-law gave us her Popover tin. I had never heard of popovers but was eager to try them. After finding a simple recipe, I made them and was thrilled when they came out light and puffy. However, they quickly collapsed after being removed from the oven. Determined to create a version that wouldn't collapse, I developed this recipe. These popovers maintain their shape and taste fresh even hours later, making them a crowd-pleaser!

Holiday Orange Cinnamon Popovers
Pre-heat oven: 425 degree F
Yields: 6 popovers (you can use a muffin tin)
Prep-time: 5 minutes
Rest-time: 10 minutes
Bake-time: 30 minutes
Total-time: 45 minutes (it goes by fast!)
Ingredients
1 cup all-purpose flour, or GF flour (1 for 1 ratio)
1/2 tsp salt
2 tbsp sugar, or monk fruit sweetener
zest from 1 whole orange
1/2 tsp nutmeg
2 tsp ground cinnamon, I use Ceylon cinnamon
2 eggs, room temperature
1 tsp pure vanilla extract
1/4 tsp pure almond extract
3 tbsp unsalted butter, melted, or dairy free butter
1 tbsp juice from an orange
1 cup whole milk, or any non-dairy milk
Directions
Pre-heat the oven to 425 degree F.
Lightly grease the popover tin, or muffin tin, with non-stick spray, then set aside.
In a medium bowl, whisk together flour, salt, sugar, zest, nutmeg and cinnamon. Set aside.
In a large bowl, add the milk, eggs, orange juice, vanilla and almond extract and 1 tbsp melted butter. Whisk for about 20 seconds, then add in the flour mixture. Use a spatula to blend until all the ingredients are fully incorporated.
Let the batter rest for about 10 minutes.
5 minutes before the timer is done, brush the rest of the melted butter in the popover tin. Make sure to brush the bottom and sides really well.
Place the pan on the bottom rack of the heated oven and let it heat up for 5 minutes.
Pull the heated tin out of the oven and use a ladle to scoop the batter. You need to only fill each tin half way full, this will leave plenty of space for the popovers to rise.
Bake for 20 minutes. Then, lower the temperature to 350 degree F. and continue to bake for another 10 minutes.
They should be a light golden color, popping out of the tin and somewhat firm. You can pull them out right away and serve them as is, or sprinkle with some powder sugar.
