Holiday Orange Cinnamon Popovers

Since the holidays are filled with oranges, spices and delicious foods, I wanted to try combining a couple of of my favorite blends, oranges and cinnamon, in one of my beloved breakfast foods, Popovers. My Holiday Orange Cinnamon Popovers are bursting with those holiday flavors and perfect for breakfast or as a mid afternoon snack.

A few years ago, my mother-in-law gave my husband and I her Popover tin. Now, prior to this, I had never heard of popovers, let alone seen one. I was so confused as to what they were, but eager to try one. So, naturally, I found a simple recipe and made them. I was so thrilled when they came out of the oven looking exactly like they did in the picture, light, airy and poofy. But, my joy soon disappeared when the airy, bread/muffin, collapsed within seconds of being pulled out of the oven. By the time I called, "breakfast time," the popovers looked like they had been ran over by a car. Thankfully, the flavors were there and I became determined to figure out my own version that wouldn't collapse on me. That's how I came up with this recipe! They will not collapse on you, and you can serve them serval minutes afterwards, or even hours and they will taste and look like you had just pulled them out of the oven. These are a crowd pleaser!

Holiday Orange Cinnamon Popovers
Pre-heat oven: 425 degree F
Yields: 6 popovers (you can use a muffin tin)
Prep-time: 5 minutes
Rest-time: 10 minutes
Bake-time: 30 minutes
Total-time: 45 minutes (it goes by fast!)
Ingredients
1 cup all-purpose flour, or GF flour (1 for 1 ratio)
1/2 tsp salt
2 tbsp sugar, or monk fruit sweetener
zest from 1 whole orange
1/2 tsp nutmeg
2 tsp ground cinnamon, I use Ceylon cinnamon
2 eggs, room temperature
1 tsp pure vanilla extract
1/4 tsp pure almond extract
3 tbsp unsalted butter, melted, or dairy free butter
1 tbsp juice from an orange
1 cup whole milk, or any non-dairy milk
Directions
Pre-heat the oven to 425 degree F.
Lightly grease the popover tin, or muffin tin, with non-stick spray, then set aside.
In a medium bowl, whisk together flour, salt, sugar, zest, nutmeg and cinnamon. Set aside.
In a large bowl, add the milk, eggs, orange juice, vanilla and almond extract and 1 tbsp melted butter. Whisk for about 20 seconds, then add in the flour mixture. Use a spatula to blend until all the ingredients are fully incorporated.
Let the batter rest for about 10 minutes.
5 minutes before the timer is done, brush the rest of the melted butter in the popover tin. Make sure to brush the bottom and sides really well.
Place the pan on the bottom rack of the heated oven and let it heat up for 5 minutes.
Pull the heated tin out of the oven and use a ladle to scoop the batter. You need to only fill each tin half way full, this will leave plenty of space for the popovers to rise.
Bake for 20 minutes. Then, lower the temperature to 350 degree F. and continue to bake for another 10 minutes.
They should be a light golden color, popping out of the tin and somewhat firm. You can pull them out right away and serve them as is, or sprinkle with some powder sugar.
